In this recipe we take the classic French dish, Ratatouille and stuff it into a wrap. We use our flavorful Dominex Eggplant Cutlets to create the hearty ratatouille wrap filling. These wraps take a cold weather dish like ratatouille and make it seasonless.
INGREDIENTS
1 Box Dominex Eggplant Cutlets prepared and cut into 1/2-inch pieces (thawed) 1 onion, sliced thin 1/2 cup olive oil
1 green pepper
2 small zucchinis, sliced 1 red bell pepper, chopped
1 green pepper, chopped 3 tomatoes
1 package whole wheat wraps
8 oz. feta cheese or mozarella 1/2 teaspoon dried marjoram, crumbled 1/2 teaspoon dried thyme, crumbled
salt and pepper
DIRECTIONS In a large skillet add 2 tablespoons of the oil and the eggplant. Cook for 2 minutes. Add 2 more tablespoons of oil, vegetables and spices. Cook the mixture over moderate heat, for 12 minutes. Stir in the tomatoes and cook until the vegetables are tender. Salt and pepper to taste. Place cheese and cooked vegetable mixture in a wrap and fold closed. In a non-stick pan add a few more tablespoons of olive oil and heat the wraps until they are lightly browned. Place on a platter an serve.
