Create this vegetarian flatbread sandwich using our Eggplant Fries. This sandwich blends the Mediterranean ingredients of pesto, eggplant and feta with arugula and sweet peppers.
INGREDIENTS
Dominex Eggplant Fries
Flatbread or Naan
1/4 cup Pesto
3 tbsp Olive Oil
1 cup Arugula
6 Mini Sweet Peppers (cut in rings)
1 cup Crumbled Feta Cheese
Fresh Basil
DIRECTIONS
Bake Eggplant Fries at 400 degrees for 18 minutes. Combine the pesto and oil. Spread pesto and oil onto flatbread. Top with Baked Eggplant Fries, Arugula, sliced Sweet Pepper Rings, Feta Cheese and Basil. Bake Flatbread Sandwiches for another 10 minutes.
